10 Granny Smith apples, pealed, cored and Sliced. 1 to 2 sticks of butter, 1/3 cup of brown sugar, 1/3 cup of natural sugar, 1/4 cup of brandy, 1 t of cinnamon, 1 t of ground cloves, 1 t of ground ginger, 1/2 t salt. Melt butter and mix all ingredients in large pan. Sauté for about 15-20 minutes. Add 1-2 T of flour to thicken and until apples are tender but firm! Take pie plate and add pastry-fill with Apple mixture. Top with pastry/crimp dough and vent top of pie. Wash pastry top with egg whites and dust with natural sugar! Bake for 1 hour at 350 degrees!
